For the Dough:

  • 2 cups All-purpose flour
  • 1/4 cup Sugar
  • 3/4 tsp Salt
  • 1 tbsp Oil or Ghee
  • 1/2 cup Water

For the Stuffing:

  • 1/2 cup Boiled Potatoes, mashed
  • 1/2 cup Peas
  • 1/2 cup Onions, finely chopped
  • 1/2 tsp Garlic Paste
  • 1 tsp Green Chili Paste
  • 1 tsp Coriander Powder
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Chaat Masala
  • Salt, to taste
  • Oil, for frying

Step 1: Prepare the Dough

Mix together all-purpose flour, sugar, salt, oil or ghee, and water in a mixing bowl until a soft dough forms. Knead the dough for about 5 minutes until it becomes smooth and elastic. Cover with a wet cloth and let it rest for 30 minutes.

Step 2: Prepare the Stuffing

Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté till they turn golden brown. Add garlic paste, green chili paste, coriander powder, chaat masala, and salt. Mix well and cook for another minute. Finally, add boiled potatoes, peas, and mix everything well. Remove from heat and keep aside.

Step 3: Shape the Frankies

Divide the dough into small equal portions and roll them out into thin circles. Use a cookie cutter or a round object to cut out circles of the same size as the stuffing mixture. Place a spoonful of the filling onto one half of each circle and fold the other half over the top to form a semi-circle. Press down the edges lightly to seal the filling inside.

Step 4: Fry the Frankies

Heat oil in a deep frying pan or wok. When the oil reaches its smoking point, carefully slide in a few frankies and fry them until they turn golden brown and crispy. Repeat with the remaining frankies.

Step 5: Serve Hot

Remove the frankies from the oil using a slotted spoon and place them on a paper towel to remove any excess oil. Arrange the hot and crispy frankies in a basket and serve immediately. Enjoy your homemade Frankie baskets with your family and friends!
